Wine is produced in several regions throughout Azerbaijan, mainly in Ganja, Gabala, Shamakhi, Goygol, Khachmaz, Goychay, Shamkir, Tovuz, Absheron and other regions. During the Soviet Union, the wine industry flourished in Azerbaijan, but came to a certain halt after independence. Long history of wine production in Azerbaijan was discovered during archeological excavations of certain ancient settlements across the country. During the expeditions archaeologists discovered fermentation vats and storage vessels that included residue and grape seeds dating back to the second millennium BC. Baku (Absheron region) has also become renowned lately for its developing vineyards.
